Pesto & Cherry Tomato Pasta

Pesto & Cherry Tomato Pasta with Bow Ties is the perfect zesty summer side. The fresh taste of basil, lemon, and nuts compliment the fresh tasting tomatoes and savoury pasta. Perfect for outdoor lunches or dinner on the patio.
2 cups fresh basil leaves
1/2 cup pine nuts, walnuts, or pistachios
1 tablespoon of Borrelli Minced Garlic or 3 cloves of garlic
1/3 cup Borrelli Grated Parmesan Cheese
1/3 cup Borrelli Extra Virgin Olive Oil
1 teaspoon fresh lemon juice
1/2 teaspoon each of salt and fresh ground pepper
Start cooking the pasta by the instructions on the packaging. While the pasta is cooking complete step 2-3.
Blend the basil, garlic, nuts and cheese together in a blender or food processor. Slowly pour the olive oil in while mixing. Add lemon juice, salt and pepper, scrape sides, and continue to mix in pulses. Mix until everything is well mixed together and smooth.
Cut the Cherry Tomatoes into halves.
Once pasta is finish cooking and drained, move into a serving dish with the cherry tomato halves and pour the pesto over top while lightly mixing, until pasta is evenly covered.
Serve and enjoy.
